Meatloaf is one of the comfort foods that conjure up visions of Mom's kitchen. This easy recipe is paleo diet friendly and surprisingly delicious

Although there are many recipes for paleo ketchup it is possible to make tomato sauce from scratch which enhances the flavour of the meatloaf.

Paleo Diet Meatloaf

Ingredients:

  • 2 eggs
  • 2/3 cup unsweetened almond milk
  • 1 tsp Mrs Dash table blend
  • 1/4 tsp pepper
  • 75 to 100 grams ground almonds (depending on how moist the mixture is)
  • 1 small onion chopped
  • 1/2 cup shredded raw carrot
  • 1 1/2 pounds ground beef

Sauce:

  • 1/4 cup tomato sauce
  • (See below or use any paleo ketchup. If using paleo ketchup omit the ground cloves)
  • 1 Tablespoon yellow mustard
  • 1/8 teaspoon ground cloves
  • 4 Tablespoons liquid honey

Method:

Mix together the ingredients for the sauce in a small bowl. Set aside.

Mix together all the ingredients except those for the sauce in a large bowl. This mixture will be very moist but not runny. Press the meatloaf mixture into a loaf pan. Cover the top of the meatloaf with the sauce and bake 1 - 1 1/2 hours at 350 degrees until cooked. Remove meatloaf from the oven and let stand 5 minutes before slicing.

Tomato Sauce

Ingredients:

  • 3 pounds of ripe tomatoes
  • 1/2 cup water
  • Try to find a variety of tomato with few seeds.

Method:

There are 2 ways to make this sauce.

Method one is to blanch the tomatoes in boiling water to cause the skin to peel. Peel all the tomatoes and place them in a large pot with the water.

Turn the stove to medium heat and when it begins to boil turn it to low. Let the tomatoes simmer 2 to 3 hours or until they have turned to mush.

If using tomatoes without seeds just use an immersion blender and puree until the tomatoes are the consistency of tomato sauce. If there are seeds in the sauce strain the tomatoes through a sieve. You will need to press the mixture through.

Method two is to simply place the tomatoes in a pot with the water and turn the stove to medium. When it begins to boil turn it to low. Let the tomatoes simmer 2 to 3 hours. They will be mushy but there will be strips of tomato skin in the mixture. Press the tomatoes through a sieve to filter out the pieces of skin or blend the skin in with an immersion blender.

Place tomato puree into 1 cup containers and freeze any you are not going to be using right away. This sauce has a fridge life of 5 days maximum.

Tomatoes are a rich source of lycopene. Lycopene is known for its antioxidant and cancer preventing properties. Products made from tomatoes also include lycopene. There is a growing number of cancers that lycopene can assist with. They include:

  • Colorectal
  • Endometrial
  • Prostate
  • Breast
  • Lung
  • Pancreatic
