The following two recipes are both Paleo Diet friendly and allow you to combine the tropical flavours of pineapple and coconut in one delicious meal.
Coconut Chicken
Ingredients:
- 4 skinless boneless chicken thighs or chicken breasts
- 1 egg
- 1 teaspoon water
- 1 cup unsweetened shredded coconut
- 1/2 to 1 teaspoon coconut oil or enough to just coat the bottom of a heavy skillet
Method:
- Whisk egg with water in a flat dish and set aside.
- Place chicken pieces individually between 2 sheets of waxed paper. Using a meat mallet pound the chicken to uniform sized pieces. Uniform pieces allow for even cooking.
- Dip chicken pieces in egg mixture until coated.
- Place chicken in coconut and turn until coated evenly.
- In the meantime heat the coconut oil in a heavy skillet. Place the chicken pieces in the skillet and cook until coconut is browned and chicken liquid runs clear flipping once. Cooking takes about 3-4 minutes per side depending on the thickness of the meat. Serve with a salad and a Grilled Pineapple slice.
Grilled Pineapple
Ingredients:
- 1 fresh pineapple sliced into 1 inch thick slices
- 1 Tablespoon crushed macadamia nuts
Method:
- Peel and core pineapple removing all tough skin.
- Cut into 1 inch slices
- If you do not have a corer for the pineapple cut it in half and use half slices.
- Heat an indoor grill to medium high heat or preheat broiler.
- If using an indoor grill place slices not touching on grill and close lid. Allow to cook for 1 to 2 minutes or until fruit is warm and grill marks appear.
- If using broiler place pineapple slices not touching on a parchment lined baking dish. Place under broiler for 1 minute or until fruit begins to brown. Turn onto the other side and brown the second side for 1 minute.
- Plate pineapple and sprinkle with crushed macadamia nuts.
Benefits of Pineapple
Pineapple is not only delicious but it packs a punch when it comes to health. It lessens the risk of hypertension assists with aging eye health, keeps teeth healthy and makes your skin beautiful.
Pineapple is also the source of Bromelain which is an enzyme used to digest protein. Bromelain is one of the main digestive enzymes. Bromelain is also an anti-coagulant, it thins mucus and is thought to improve immune function. Its anti-inflammatory properties have been shown to treat the symptoms of rheumatoid arthritis. Topically it is thought to speed up wound healing.
Pineapple and coconut are healing foods. Natural medicine does not have to taste bad and adding these two healers into a healthy diet proves just how delicious eating healthy can be.
